To Die For Raspberry Muffins

Like I have said before, I all of a sudden have an itch for baking.  I also have always wanted to take a picture of all of my ingredients lined up like this. Kind of fun! I came across a recipe called To Die for Blueberry Muffins and tweaked it a little bit to my liking.
They are A-MA-ZING.

Ingredients: 1 1/2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/3 cup applesauce
1 egg
1 cup fresh raspberries
1/4 cup butter, cubed
1 1/2 teaspoons cinnamon

Preheat over to 400 degrees F
Grease muffin cups.
Combine 1 1/2 flour, 3/4 cup of sugar, and baking powder
Place applesauce in a one cup measuring cup, add the egg and milk.  Mix this with the flour mixture. Fold in raspberries. Fill muffin cups to the top and sprinkle with crumb topping. Makes 12 muffins.  

To make crumb topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cubed butter, and 1 1/2 tsp. cinnamon. Mix with fork and sprinkle over muffins before baking.

Bake for 20 minutes.



These may or may not have all been gone in 2 days. 

The best part?  Completely picky-kid approved.
